MASALA DOSA 

Ingredients :-
 

  • 1½ cups rice
  • 1/2 cup urad dal 
  • Salt to taste 
  • 2 large potatoes 
  • 1 medium onion (chopped)
  • 1/2 teaspoon yellow split peas
  • 1/2 teaspoon mustard seed 
  • 1/2 teaspoon turmeric 
  • 1-2 green chili
  • 1 tablespoon oil 

Method of Preparation :-

  • Separately soak rice and urad dal at least 6 hour or overnight in water. 
  • Grind to paste. 
  • Mix together, add salt with water to make batter. 
  • Leave in room temperature overnight. 
  • Mix onion and chilies to the thin batter. 
  • Heat pan or griddle with little ghee or oil. 
  • Spread the mix on pan in circular motion to make thin Dosa. 
  • Cook on both the sides, if desired. 
  • Heat oil. Add mustard seed, peas, onions and spice. 
  • Fry for about 5 minutes on medium heat or/until onions are turned into golden brown 
  • Add potatoes and mix and cook some more. 
  • Add filling inside Dosa and roll. Serve hot with Chutney.

 

 
KELE KA HALWA
Ingredients :-
 
  • 1/2 tsp Nutmeg ground
  • 1 tablespoon Pure Ghee 
  • 3 medium bananas ripe, peeled and mashed
  • 1 cup Sugar 


Method :-
 

  • Heat ghee in a heavy pan. Add bananas and cook over low heat, stirring to prevent the mixture from sticking. 
  • Cook for 10 minutes, or until bananas have browned and resemble soft toffee. Add more ghee as neccessary. 
  • Add sugar and continue stirring until dissolved. 
  • Add nutmeg and cardamom; remove from heat. 
  • Spread halwa into a deep, large plate. Allow it to cool and cut into squares

 

 
MORU CURRY
Ingredients :-
 
  • Yogurt 2 tbsp 
  • Coconut paste 1/2 cup 
  • Oil 1tbsp 
  • Mustard seeds pinch 
  • Onion 1 tbsp chopped 
  • Whole red chilly 4 broken 
  • Garlic 1/2 tsp 
  • Ginger 1 tsp 
  • Curry leaves 
  • Fenugreek powder1/4 tsp(optional) 
  • Cumin seeds 1/2 tsp 
  • Turmeric 1/8 tsp


Method :-
 

  • Mix coconut, curd and green chillies in a blender. 
  • To this paste, add 1 cup water, red chilly powder, turmeric and salt. Bring to a boil and remove from the heat. 
  • Heat the oil separately. Add mustard seeds, cumin seeds, fenugreek seeds to the oil and then, add the chopped onion, the red chillies,the garlic, the ginger and the curry leaves. 
  • Add this to the paste. 
  • You can also add vegetables like zuchini, yam or other green vegetables but make sure that the vegetables are cooked before adding the curd. This way you'll have to boil the curd only once.

 

 
RICE PUTTU 
Ingredients :-
 
  • 1/2 Kg Raw Rice
  • 1/2 grated Coconut
  • Water to sprinkle 
  • Salt to taste 


Method :-

  • Soak rice in water for 4 hrs, then drain it and grind it to make fine powder. 
  • Heat the powder for 5 mts.While heating stir it. Keep it for cooling. 
  • Mix salt with water sprinkle this to the powdered rice just to make the powder wet. 
  • For making puttu special utensil is used named puttukutty or micro puttu. Put a handful of grated coconut in the puttukutty and then put rice powder till half then add another handful of grated coconut. 
  • This is done till the top. Close the lid steam it for 2 mts in cooker. 
  • Serve it with potato curry or ghee
